Golden Roasted Potatoes


WHO. DOESN’T. LOVE. POTATOES? I dare you to say no :D. Seriously — everyone loves fries! And even though we ALSO know that their golden-deep-fried-goodness is in fact seriously unhealthy, many of us nevertheless can dive deep into a batch of fresh crispy fries, alongside a ton of condiments, and not have a care in the world. Fact stands though — deep-fried-anything is a recipe for disaster. Key word here is “fried” — with this recipe, you’ll actually be baking your potatoes, using a teeny fraction of the oil you’d be needing the traditional way, making them way healthier to consume. So you can have the same crispy golden greatness, but with far less hazard. Give these golden nuggets of joy a shot today:

Ingredients:

750g baby potatoes sliced in half, skin on (or normal potatoes, cut in wedges, skin on)

1 tbsp olive oil

1 tsp paprika

1 tsp dried thyme

1 tsp minced garlic

1/2 tsp salt (or more to taste)

1/2 tsp black pepper

Method:

Preheat oven to 200.C

Mix all ingredients together in a large bowl

On a parchment-lined baking tray, lay the potatoes side by side, skin-side up. This is a crucial step — DO NOT overlap the potatoes, or they’ll simply steam and won’t be crispy and golden on the outside.

Drizzle any dressing left from the bowl where you mixed the potatoes over them on the baking tray.

Bake potatoes for 30-40 minutes, or until golden on the outside (the skin should be starting to shrivel).

Add freshly cracked salt over the top if desired.

Serve hot, as a side or on their own.
